Webb Wisdom: Meatloaf

Diane’s Meatloaf

2.25 pounds of ground beef (or thereabouts)
1 envelop of onion soup mix
2 eggs (raw)
1 onion chopped
1/2-1 bell pepper chopped
1/4-1/2 cup of bread crumbs (optional)
Salt (go easy since the soup mix has salt too)
1 teaspoon black pepper
Ketchup for the top

Combine all ingredients EXCEPT the ketchup and mix in a bowl.  When completely combined form into a loaf and place on rack of boiler with panunderneath to catch the grease as the meat loaf cooks.  Place in pre-heated 350% oven (or thereabouts).  After about 30 minutes of cookingadd the ketchup to the top (cover loaf completely).  Cook 30-45 minutes longer or until done (which ever comes first).  Serve with mashed potatoes and sweet green peas!  Use left over meatloaf for excellent sandwiches.

Alternative: you can also cook in a loaf pan but you will have to drain the drippings periodically so as to avoid a mess in your oven.
